Recipe Steps
Ingredients:
  • 1 cup whole wheat flour
  • 1/2 cup jaggery, grated
  • 1/4 cup ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 cup water (or more if needed)
Instructions:
  • Combine Dry Ingredients: In a large bowl, mix together the whole wheat flour, jaggery, cardamom powder, cloves, cinnamon, and baking soda.
  • Add Ghee: Pour the melted ghee into the dry ingredients and mix until well combined. The mixture should resemble crumbs.
  • Add Water: Gradually add water, mixing until the dough comes together. Be careful not to add too much water.
  • Knead: Knead the dough for a few minutes until it becomes smooth and pliable.
  • Shape: Divide the dough into small balls, about the size of a golf ball.
  • Fry: Heat oil in a deep pan over medium heat. Carefully drop the dough balls into the hot oil and fry until golden brown on all sides.
  • Drain: Remove the fried thekua from the oil and drain on paper towels.
  • Cool: Let the thekua cool completely before storing in an airtight container.
